
Boiled chicken can be used as a meat substitute for just about any dish. Boiled chicken works well in enchiladas, soups, salads, and just about anything else. If the chicken was boiled too long, there is a chance that the flavor has been boiled out of it. Add a can of chicken stock when you boil the chicken, or to a soup afterward to help give the chicken its flavors back. Add this to my Recipe Box.
Instructions
Chicken Salad

Mix the chicken, olives (black and green), apple and romaine lettuce in a large bowl.
2Combine the mayonnaise, honey and lemon juice in a small bowl. Mix well. This is your dressing.
3Add the ingredients of the small bowl to the large bowl. Mix well and serve.
Garlic Chicken and Cabbage Soup

Combine all of the ingredients in a pan.
5Place pan on high heat and bring to a boil.
6Cook until cabbage is done, about 15 minutes.
7Remove from heat and serve.
